Title: Zagorian Cheese Puff Appetizer

Yield: 4 Servings

3 Eggs
3cFlour
3cWater
  Salt and pepper to taste
1/4kgFeta Cheese (Nice damp
  Stuff not hardened old
  Stuff)
2ozOlive Oil (The good stuff
  Green extra Virgin if
  Possible)

Mix all the items together except the Feta until it is a thick liquid and then pour into a greased baking pan (about 0.5 in depth of liquid) Sprinkle the Feta on top, cook at 500 deg until crispy. Cut and serve.

I picked this up a month ago in Greece. It is specific to the region known as Zagoria up between the Pindos Mountains and Albania and is from the Hotel Elati in that area.
